THINKING OUTSIDE AND BEYOND THE CHOCOLATE  BOX.

Introducing you to a match made in heaven - the soft, solid sumptuousness of dark chocolate with the fragrant freshness of tea.

Cha-Ke-Li is a truly unique experience, the warm comfort of a cup of tea embedded in a luxuriously bite sized chocolate that represents the best of east meets west cultures.

About

Every Ying has a Yang. Cha-ke-li now brings to you the perfect fusion of Western delights with Eastern tradition.

Chà.Ke.Li. which literally means “chocolate” in mandarin, is a refreshing and evocative blend of tea-infused chocolate, handmade behind our doors under the stewardship of award winning chef Michele Rodelli. The dark, sensuous temptation of chocolate combined with the fragrant freshness of tea to seduce you with a truly creative experience.

This unique recipe represents a completely new concept of eating chocolate by combining the most exclusive hand picked chinese teas, with the most sought after chocolates sourced from internationally cherished coacoa plantations from every corner of the globe.

Merging the tea cultures of the eastern world with the chocolates of the western world, each coupling is carefully picked to mix and match with a perfect partner, and each one has a resounding distinct flavour that will last well after you have taken the last bite.

Each of the teas we use has a long, and often mythical history of use and origin giving each of our chocolates a character of its own, while each irresistibly unique flavour of chocolate in our box is a prized ingredient amongst the world’s chocolatiers.

Both our teas and chocolates together make for a powerfully healthy food revitalising the mind and body with its rich content of antioxidants and the senses with its colourful spectrum of aromas.

FLOWERPASSION

Tea: Jasmine

Chocolate: Ghana 40.5%

Combining the sweet, delicate delights of Jasmine tea with the strong, stark red fruit and chestnut notes of Ghana chocolate.

Ghana chocolate is revered for giving off an aroma of hazelnuts with tones of caramel with a creamy-sour and musty-woody taste. Paired with the intoxicatingly perfumed taste of Jasmine tea, the two strike a perfect chord with each other providing a contrasted but balanced taste to the tongue.

Jasmine tea is fast on course to becoming the most famous scented tea. As one of the first flavoured teas to be exported out of China to the west in the 1800s, its no wonder this fragrant, floral yet fresh and blossomed tea was an obsession of the Ming dynasty

NINANOTE

Tea: Longjing

Chocolate: Papua 35.7%

Papua chocolate is cocoa beans sourced from paradise. As such a unique tasting bean, it has to be very carefully prepared by chocolatiers with a step-by-step method that must be adhered to strictly in order to prevent being ruined by smoke during the drying period. It has powerful, fruity yet musky tobacco notes to its personality.

Longjing or ‘Dragon Well Tea’ offers an intricate and long-lasting taste and a signature chestnut aroma. It produces light yet distinct grassy and vegetal flavours with a buttery silky, elegant texture ending with a woody and nutty close.
This vivid tasting tea combined with the subtly smoky and bitter richness of Papua chocolate, makes for an interesting marriage of tastes.

NISHIOCHA

Tea: Matcha

Chocolate: White 37%

Matcha tea is an antioxidant titan unlike any other. One cup alone contains as much nutritional content as 10 cups of green tea. It uses the entire leaf which is grinded down into a fine powder, meaning that 100% of the leaf nutrients are utilised. It has a near endless list of health benefits, from boosting metabolism and burning calories, to its detoxifying and calming qualities for both the body and mind. Furthermore it is rich in fiber, chlorophyll, vitamin C, selerium, chromium, zinc and magnesium. It’s also known to prevent disease and lower cholesterol as well as blood sugar. It truly is a super food if not more.

Matcha tea is made from shade-covered leaves. It has a full-bodied, creamy vegetal taste which complements the fresh and clean, milky taste of white chocolate well. Not overly sweet, but charming nonetheless.

BRITISHSCHAZTEC

Tea: Earl Grey

Chocolate: Mexico 66%

As a flavoured tea, Earl Grey is a match made in heaven when it comes to pairings, with its scented notes of fruit, flowers, spices, oils and extracts. Which is just as well when you introduce it to the distinctive, rich and sweet flavour of Mexican chocolate. The result? Uniquely ‘Brexican’ of course.

Earl grey is considered one of the most flavoursome of the flavoured teas, using a black tea base which is incensed with flavoured oil from the rind of the bergamot orange – a citrus fruit somewhere in between that of an orange and lemon with a touch of grapefruit. Tastewise it is sweet yet floral, sour yet bitter and the nature of the bergamot lends itself perfectly with the bold, full-bodied and malty black tea.

Mexican chocolate is typically made with roasted and ground cacao ribs, sugar and cinnamon. It really has the kick and spice of Mexico’s essence. The texture is granular, with a nice creamy finish from the coacoa butter.

RIOoOLONG

Tea: Oolong

Chocolate: Venezuela 72%

Oolong is not a simple tea. Coming from a wide category which is somewhere in between green and black, its flavor, depending on how it is made, can range from deep florals, tropical fruit to deep chocolate and roasted nuts, which means it makes a perfect partner for the mix of fruity and bitter flavors of the simple Venezuela chocolate.

Which contains only cacao, raw cane sugar and natural cocoa butter.
Although the ingredients are simple, it embraces complex notes of coffee making for a truly delectable and treasured chocolate.

DARKSPICE

Tea: Tiguanyin

Chocolate: Santo Domingo 70%

Tiguanyin means “Goddess of mercy” and carries a myth of how the tea was found. With a flowery scent, it also has a pleasantly sweet aftertaste that lingers in the mouth and an appetising honey-life fragrance and finishing.

The Santo Domingo chocolates comes straight from the Caribbean region and bears a complex imprint of sweet berries with a hint of spiciness and a creamy texture.

This is an interesting taste combination. Tiguanyin is one of the most famous varieties of Chinese oolong tea originated in the 19th century in Anxi in Fujian province, which boasts a complex taste profile and warm aroma, and is blended here with Santa Domingo chocolate, with its slightly fruity, smooth taste. It’s a dark yet surprising taste experience.

SMOKEYSHUIXIAN

Tea: Shuixian

Chocolate: Cuba

Shui Xian tea originates from the high mountains of Wu Yi Shan, a name that has became a synonym of high quality Oolong teas. Heavy and dark, this infused tea balances fruity tastes with woody, char and a hint of mineral notes. It is strong and full-bodied with a refreshing floral aftertaste and smooth mouth feel, making for an intense experience when combined with Cuba chocolate, with its roasted and woody notes reminiscent of tobacco leaves and deeply intense cocoa taste.

DARKEMBRACE

Tea: Pu’er

Chocolate: Tanzania

Pu’er tea from Yunnan is known to have a clean, soft, round complex flavor, with a subtle sweetness and a slight dryness. It has a uniquely earthy taste that can also be described as woody, astringent yet mellow all the while switching between a sweet and bitter floral glow. Even more complex then when partnered with chocolate from Tanzania which is in itself complex and well balanced. Tanzanian chocolate contains aromas of leather, red berries and emanates light floral notes which become intensely more chocolatey along the ride. Subtle tones of vanilla and earth have also been described.
